Subbase is the layer of rock that sits between the raw ground and your base gravel. It's usually a coarser, cheaper crushed stone or crushed concrete, with bigger pieces than what goes right under a driveway or slab. The job is to spread weight down into the dirt so the layers above it don't sink.
"Subbase" names a layer, not a specific rock. Around here it usually means larger crushed stone (about 1 1/2 inch and up) or crushed concrete broken down to a similar size. It runs cheaper per ton than washed decorative stone because the screen is rougher and it often includes fines. You order it when the soil under your project is soft and you need to build up thickness before you place base and pavement.

How to choose within subbase
Under pavers or concrete
A crushed base — usually 3/4" minus — compacts to a solid, load-bearing pad. Uniform depth matters as much as the material.
Under a shed or hot tub
Compact 4 to 6 inches of base material. More for anything that will sit long-term.
Driveway base
Crushed limestone or road base underneath, topped with a decorative or wear layer.
